The only one restaurant in Cancun claiming the DIRONA award
(Distinguished Restaurant of North America) since 1998.
The
richly blended flavorful cuisine that we know as "Cajun and
Creole" comes from the deep south of the United States of America
in Louisiana. However, its roots hail from various parts of the
world and its history is as complex as the spices used in its dishes.
In the 18th century French settlers in the area known as "Acadia"
in Canada, where forced out by the British.
Eventually
1600 of them made their way down to the Mississippi delta area near
New Orleans. At this time New Orleans was a wild country which was
attracting refugees and settlers from Europe as well as from the
West Indies. This blend of French, American, Spanish, Italian and
African Islands gave rise to this new cuisine called Cajun and Creole.
Over
the years these different cultures using the food products that
are available in this rich area have given birth to a true World
Cuisine. Many people wonder what the origin of the word "Cajun"
is. When the French settlers first arrived from Acadia the American
Indians could not pronounce properly the word "Acadian"
and subsequently the name Cajun was used. "Cajun" is the
food of the country people in the Bayous and "Creole"
is more of a city food from New Orleans. However both of them are
frequently mixed
